I came across her blog by chance and I saw this very simple recipe of potato wedges which was exactly what I needed that dull gloomy day. You know, one of those days where all you want to do is munch on something hot, while you read a book snuggled in the softest throw and look out at the rain? The potatoes came out perfect, steaming hot and crunchy.

I came across her blog by chance and I saw this very simple recipe of potato wedges which was exactly what I needed that dull gloomy day. You know, one of those days where all you want to do is munch on something hot, while you read a book snuggled in the softest throw and look out at the rain? The potatoes came out perfect, steaming hot and crunchy.
What you need:
Three or four potatoes cut into wedges
1 tsp of olive oil
Salt to taste
I used chopped up cilantro too. I love the taste and smell of cilantro.
What you need to do:
- Put all the ingredients together in a big bowl and toss them till the potatoes are coated with the salt and oil and bits of cilantro.
- Arrange them in a single layer on a cookie sheet and bake them in a pre-heated oven at 350 degrees for 30 minutes. Use a fork or toothpick to check if the wedges are cooked.
- After the 30 mins, switch the oven from bake to broil. Broil till the potatoes are evenly browned on both sides. Broil for 5-7 minutes.
- I squeezed a lime on the wedges. Cilantro and lime potato wedges! Delicious!
